The Essentials I Keep In My Car “Just In Case”

We live in Michigan… more specifically, West Michigan. This means we have pretty nasty winters, thanks to “lake effect” snow, sleet, and ice that blasts our area ALL winter long.

Because of this, I’ve come up with a pretty good list of “car essentials” that I keep in my vehicle at all times — and a few extra items for winter and summer. Today, I’m sharing that list!

Simple, From-Scratch, Vegetable Beef Soup

After 3+ weeks of frigid temperatures and lots of snow, soup has been in regular rotation on our weekly menu plan — and a couple weeks ago, the ONLY soup I really wanted to make was Vegetable Beef.

Thankfully, I had a bunch of veggies to use up… and 20 minutes later, my soup was simmering! Yes, in less than 20 minutes, you can have this simple, from-scratch soup simmering on your stove too!

Although I absolutely adore Nora’s curls, her hair is snarly, hard to comb, and a pain to control. Add in the fact that she doesn’t love any amount of water on her face or head, and you can imagine how difficult it is to wash her hair — let alone use conditioner to control the frizz and snarls!

For several months now, I’ve been on the look-out for a lettuce salad that can be made ahead (without wilting) and enjoyed as leftovers (without getting soggy). I didn’t think I would ever find a recipe… until last month!

Not only can this salad be made ahead and enjoyed for days, it can also be made from pretty much any salad-type ingredients you have in the house — oh, and it tastes amazing!
