One of my favorite desserts is cheesecake — however, I rarely have the necessary 4-5 packages of cream cheese in my refrigerator. So I’m always on the lookout for simple cheesecake-like recipes… and I’m excited to share one of my new favorites with you today.

Dave and I both give this simple recipe 2 thumbs up, and it’s SOOOO much easier than cheesecake!

The Triple-Chocolate Bundt Cake recipe I posted over 2 years ago is STILL one of our favorite desserts. We actually loved the recipe so much that I began experimenting with different ingredients — and came up with a general “recipe” that you can customize to your family’s taste.

This recipe actually starts with a boxed cake mix — but tastes like it’s made from scratch. It’s so easy that anyone can make this delicious bundt cake!

It’s no secret that I absolutely LOVE LOVE LOVE pumpkin. I’ll try pretty much any food made with pumpkin, and there’s a fairly good chance that I’ll like it.

However, since our kitchen isn’t ready for cooking or baking just yet, I figured I’d share a bunch of delicious pumpkin recipes from around the web… all in one nice, organized spot for you :)

As you know, Dave and I are smack in the middle of a huge kitchen renovation — which means our kitchen is completely unusable. Thankfully, I received a brand new Stovetop Slow Cooker from Hamilton Beach and have been using it to whip up all sorts of delicious slow cooker recipes.

My most recent recipe was chocolate cake… and was it ever good!

A few weeks ago, I was in the mood for chocolate… and I had a package of Double Chocolate Chunk cookie mix in our pantry. However, I started to wonder if I could do something else with it, besides just make “boring” cookies again.

Today’s recipe is SOOOO yummy… but if you’re on a diet, you might just want to stop reading now!

Chocolate Cup-Cakes

The other day, I found a recipe for chocolate cake… in a cup… in the microwave. I had my doubts — I pictured scrubbing chocolate out of the inside of my microwave and scraping crusty stuck-on chocolate from my pretty white mugs long after this little baking experiment was over. Thankfully, I was wrong.

If you’re looking for a delicious dessert for one… or a fun project to tackle with your kiddos, this is it!

Oatmeal Caramel Bars

During our spring break staycation, I spent one afternoon in the kitchen baking up a storm. I filled an entire shelf in our deep freezer with baked goods… and of course, we ate a bunch too.

Most of the recipes I tried were brand new to me, and one of our favorites were these Oatmeal Caramel Bars. They are just so quick and easy, they taste delicious, and they make a REALLY big batch so there’s enough to eat now and plenty to put in the freezer.

Two weeks ago, I was asked (at the very last minute) to bring a dessert for an event I had previously agreed to attend. I was a bit annoyed at the lack of planning — and I seriously contemplated buying something from the bakery on my way — but my “frugality” won over and I decided to make a simple dessert with the ingredients I had on hand.

It was my first time trying this recipe and it was SO good that I’ve already made it 2 more times!

If you’re looking for a really simple dessert or snack that you can completely customize for your family’s taste buds, I might just have the perfect recipe for you. All this recipe requires is a simple Graham Cracker crust and whatever toppings you have on hand.

I regularly make these Easy Layer Bars when I have a random assortment of half-empty bags of baking supplies to use up — I’ve yet to have any complaints about the deliciously sweet combinations I come up with!

Really Simple Monster Cookies

Monster cookies are some of our all-time favorite cookies — probably because they are a conglomeration of peanut butter cookies, chocolate chip cookies, M&M cookies, and oatmeal cookies all rolled into one super delicious cookie!

I used to put off making Monster Cookies because they were so much work… however thanks to this super simple recipe, I’ve been making them on the monthly basis!

The Best Apple Cake!

It’s honestly the BEST apple cake/bread I’ve ever made! It tasted absolutely delicious plain {for breakfast} and with a dollop of whipped cream {for dessert}! And even though I cut out some of the fat by replacing half the oil with my homemade applesauce, this cake was still SO moist and very dense with a grand total of FIVE chopped up apples!

I think this might be my new “go-to” recipe for apples… I only wish I didn’t have to wait until next Fall to have a great selection of fresh Michigan apples!

Yummy Brownie/Cookie Bars

I’ve shared several of my “from a box” recipes before, but these brownie/cookie bars are my newest {and probably easiest} recipe… if you can really even call it a recipe.

Oh, and did I mention they only require about 7 minutes of prep work before they are ready for the oven!!

Holiday Goodies Thumb

I really do love spending time baking in my kitchen, and there are times when I like making more “involved” recipes. But most of the time I rely on semi-homemade food — especially this time of year when we have so many holiday parties that require food.
However, any time I start with a boxed mix, I almost always manage to spruce it up a bit and make it look {and taste} more homemade. Here are a few of my favorite semi-homemade “recipes”!

It’s Thanksgiving week — which means my mouth is already starting to water for the huge Thanksgiving dinner we’ll be having on Thursday afternoon. I’m bringing a delicious sweet potato casserole to our gathering at Dave’s parent’s house; but since I’m in love with all things “pumpkin”, I just couldn’t resist making one more pumpkin dessert!

If you’re still looking for a really simple Thanksgiving dessert idea — I might just have the one for you!

Every year, I like to try out a new version of the traditional pumpkin pie.
Last year I tried {with much success} Apple Butter Pumpkin Pie and this year, when I couldn’t make up my mind if I wanted to make cheese cake or pumpkin pie, I decided to make a Cream Cheese Pumpkin Pie.

It is so delicious and has quickly become my all-time favorite pumpkin pie!

Simple Peach Almond Crisp

If you live in Michigan, it is officially peach season!!! And I’m assuming that in many areas across the country, you have seen bushels of peaches at farmer’s markets, road-side stands, or {at the very least} a significant price drop in the cost of peaches at the store! Last week, I mentioned that my mom and I canned nearly 3-dozen quarts of peaches. It took us one morning and part of the afternoon to finish… but now we have enough jars of of [...]

Simple Peanut Butter Cookie Bars

posted by Andrea | 05/28/2011 | 2 comments

I love fresh-from-the-oven cookies, but I don’t always love the time it takes to scoop out every individual cookie and then wait in the kitchen while the first tray bakes, then quickly swap the first tray for the second tray, move the first try to the cooling rack, scoop more cookie dough onto the next tray, pull the second tray out of the oven, etc. etc. It’s kind of a process – and some days, I just don’t have the patients to [...]

If you’re looking for a REALLY simple, super delicious, spring-time dessert that you can make with only a few ingredients, I have just the recipe for you! I asked for recipe ideas on Facebook several days ago and Cori suggested this delicious Angel Food dessert. I made it last week, and everyone loved it — thanks Cori!!  I served it with fresh strawberries, raspberries, and whipped cream…but it was seriously good enough to eat on it’s own. And the best [...]
