I second the pasta as a cheap meal; I ususally use local ground beef, but when the budget is tight, it’s plenty tasty with a can of tuna in it as well!

I have many recipes, but my latest is to stretch the meat in hamburgers is to add a can of black beans. It adds a good source of fiber, helps fill you up and is cheap!

I love to get a whole chicken on sale and throw it in the crockpot with salt and pepper. After about 6 hours you have delicious moist chicken that can be stretched to several meals. We usually have quesadillas or fajitas, chicken salad, chicken pannis from that one chicken. Last time we had fresh rosemary in the garden and I added that to the crockpot. Not only was the chicken delish but the whole house smelled of rosemary. Yum!

Ok, maybe a strange frugal meal, but we like it! Noodles-cooked, eggs fried, ham-chunked into little bits, all fried up together with salt, pepper, and a little, dried chopped onion. Usually these things might have been leftovers like extra noodles, or ham from Easter or maybe even lunch meat, and I almost always have eggs on hand.

I’m trying desperately to save up for our wedding at the end of September, so every penny adds up when I’m planning out our weekly meals. I also lost about 40 pounds over the past two years by eating healthier and I’m trying to avoid buying processed foods, even though they’re cheaper. It’s tough to eat healthy and on a budget!
Now I make a weekly menu (after scouring the Internet for yummy recipes), list out everything we already have at home and fill in the holes by sticking to our grocery list. So far it’s been going really well! My favorite budget-friendly meal so far is a crustless spinach quiche (http://allrecipes.com/recipe/crustless-spinach-quiche/). We can add more veggies, substitute cheeses and can have soup or salad with it to make it feel like a complete meal. And the leftovers are perfect for breakfast or lunch at the office.
I hope we can keep up this new money-saving strategy after the wedding while we’re saving up to buy our first home!

As someone with 3 little kids, a limited budget, and a love for being in the kitchen, I work very hard to spend no more than $300 a month on groceries (it works most of the time, even with consuming 5 gallons of milk a week!). I plan for the WHOLE month and try to shop all at once with only small trips to get more produce and milk on a weekly basis.
One of my favorite frugal meals is homemade pizza. When you make your own dough, you have to liberty to prepare it in different ways (grilled is my fave!) and make something you don’t get sick of.
I also really love homemade pot pie. If you can manage a somewhat decent crust, armed with a bit of leftover meat, a bag of frozen veggies, cornstarch, and a couple bouillon cubes, you can muster a pretty amazing meal!

Wow! $300!?!? I’d love to know your secrets 🙂 I used to coupon but we don’t eat processed food anymore and that’s all the coupons are for. (plus I make my own cleaning supplies and laundry detergent) Our food bill is still around $600 for 2 people 🙁 —at the organic grocery.

My favorite frugal meal is “Leftover Smorgasbord.” By the end of the work week, I might have a little bit of everything left over–lunchmeat, veggies for salads, berries, the last bit of yogurt in the container–and Saturday is the day I use up all the “loose ends” before I shop for the week on Sunday. It feels so good to throw away empty containers and not waste any food!
