One of my favorite baking ingredients is pumpkin puree — especially in the fall.
I’m a lover of all things pumpkin — pumpkin pie, pumpkin cheesecake, pumpkin bread, pumpkin dips. I eat them all! I love pumpkin puree so much that I even tried {with much success} to grow pumpkins in my garden a few years ago. It was great, except that they took over half our back yard! I may have gotten a little carried away…
I’ve worked hard to convince my husband that he likes pumpkin puree — and he’s finally coming to his senses {I’m very convincing!}
And in case you didn’t notice, pumpkin puree is orange {duh}. I’m not a doctor, but I’m pretty sure that means it’s good for you, right? Plus I use pumpkin puree as a substitute for oil in cake, bread, brownies, etc. The results are deliciously moist low fat, low calorie desserts. And my husband doesn’t even know it’s in there!

Oh, I love pumpkin chocolate chip muffins, too! I think it’s time to make a batch soon. I try to always keep some in the freezer for quick breakfasts on the weeks to come. We planted pumpkins this year as well and quickly discovered that they take over the yard, too! Pumpkin chocolate chip muffins will make it worth it, though!

Yes, I always keep a variety of muffins and quick breads in the freezer. We always have snacks on hand and I can bring some to a friend at a moments notice {which I’ve done many times!}
