I love meal planning and used to do a good job despite having to work around my husband’s rotating day/swing/mid work schedule. I think the most difficult part is the sparatic change in numbers at our table. Some nights it’s just my husband and I and others it’s our family of 4 plus maybe a friend or 2 over at the last minute after school.
