I had a ton of mashed potatoes left over after Thanksgiving — even after I gave a bunch of them away and made a shepherd’s pie!
So last week, I made this delicious Cheesy Mashed Potato Soup — which is basically a combination of several different soup recipes I found.
This is a delicious way to use up extra mashed potatoes — and if you don’t have mashed potatoes ready to go, you can substitute potato flakes and water {see receipe instructions below}
Recipe for Cheesy Mashed Potato Soup

INGREDIENTS:
- 3 T. butter
- 3 small onions; chopped
- 2 T. all-purpose flour
- 4 c. water or broth
- 1 t. salt
- pepper to taste
- 2 large potatoes; peeled and chopped into bite-size pieces
- 2-4 c. of leftover mashed potatoes** (I used all the leftovers I had which was around 3 c.
- 1 c. milk or cream
- 1/2 t. dried basil
- 1/2 t. garlic powder
- 1 c. shredded cheddar cheese
- bacon; cooked, and crumbled (optional)
** if you don’t have mashed potatoes on hand, you can also substituted 2 c. potato flakes along with 2 c. of additional water or broth.
DIRECTIONS:
Melt butter in a 3 quart saucepan over medium heat. Saute onions until tender and golden brown.
Whisk in flour, chicken stock or water, salt and pepper.
Add chopped potatoes and bring to a boil for 15 minutes or until potatoes are tender.
Stir in mashed potatoes, milk, basil, garlic, and cheese and simmer until heated through.
Serve in shallow bowls with additional cheese and bacon!
I was guessing the first time I made this recipe and even then, it only took about 30 minutes from start to finish — which totally makes this a family-friendly weeknight meal.
And I know your kids will eat it because even Nora loved it!

First time making this soup. It works out great for left over mashed potatoes & other potatoes that have been previously cooked. Takes little time to make & it was delicious. I made a double batch & added a little more salt & pepper. I will definitely make this one again!!

This looks delicious. Can it be frozen? My almost 80 year old Mom is going to have back surgery and I want to make some freezer meals for her in advance.

Thanks Barbara. You can definitely try to freezer this soup — but I personally don’t love the texture of potatoes after they are frozen and defrosted. Mashed potatoes are probably the easiest form of potatoes to freeze though — so it might work!

I’m making this tonight for the second time since you posted this last week — I was wondering what to make for dinner that night and was so excited to see this recipe AND have most of the ingredients on hand! I didn’t have any leftover mashed potatoes or potato flakes, so I just doubled the amount of potato chunks and mashed some up after it was cooked. I also didn’t have bacon, so I cooked up the ground chicken I had on hand and added that to it. So easy and soooo yummy! My kids (1 & 2) LOVED it!!

I LOVE how you always find a way to remake what you have into something wonderful, easy and delicious! We are the same way over here and we have so little waste, which feels great too! I used leftover stuffing into meatballs after Thanksgiving, they were amazing! Your meatball recipe was simple, inexpensive, and delicious too! I actually don’t have a “recipe” for shepherd’s pie — I just dumped a bunch of extra meat and veggies in the bottom of a casserole dish (I used turkey, corn, beans, and brocoli) and then topped it with at least 1″ of mashed potatoes.
I put a few dots of butter on top of the potatoes and then sprinkled the top with Paprika. I baked it for about 30 minutes or until heated through.
