I got a new slow cooker for Christmas and have already used it a couple of times. I actually have 3 different slow cookers — all different sizes — but to be honest, I haven’t used them as much as I should.
So this year, my goal is to use a slow cooker once a week — or at least a few times each month.
I’ve already made a couple really delicious meals since Christmas {recipes coming soon}… but here are a few more I definitely want to try this coming year.
1. Vegetarian Lasagna — we try to eat one meatless meal each week… and this one looks pretty good!
2. Santa-Fe Chicken — another Mexican meal to add to my recipe box
3. Apricot Pork Roast — talk about simple… there are only 3 ingredients besides the pork
4. Herb Chicken — a very easy way to cook a whole chicken
5. Chicken Enchilada Soup — we love my enchilada recipe, so I’m sure we’ll like the soup version too
6. Chicken and Dumplings — only 4 ingredients other than chicken!
7. Overnight Steal-Cut Oatmeal — this would be great for quick morning breakfasts
8. Triple Chocolate Cake — who knew you could make cake in a crock pot!
9. Beef Stew — I absolutely love making stew with leftovers from Sunday dinner
I already have one very successful slow cooker recipe to share with you later this week… and I’m sure I’ll be sharing more over the next several months!

Mine and my family’s favorite crockpot recipe is “Homemade Pulled Pork”……both of my sons (ages 21 & 22) loved it and each time I tell them I am making it, they either say “I Love You,” and or give me a hug and say thank you!! Needless to say, it’s a big hit!! What makes it interesting is you cooked it for 6-7 hours on high in ROOT BEER!! We use A & W brand (don’t like the taste of Mug Root Beer).

Cheesy Italian Tortellini
½ lb ground beef
½ lb Italian sausage
1 (15 oz) container refrigerated marinara sauce
1 cup sliced fresh mushrooms
1 can diced Italian style tomatoes
1 cup shredded mozzarella cheese or pizza cheese blend
1 (9 ounce) package refrigerated 3-cheese tortellini
1.Cook beef and sausage over medium heat until brown: then drain.
2.Spray inside of slow cooker with cooking spray. Mix beef mixture, marinara sauce, mushroomsand tomatoes in slow cooker.
3.Cover and cook on LOW 7 to 8 hours.
4.Stir in tortellini; sprinkle with cheese. Cover and cook on low about 15 minutes longer or until tortellini is tender.

You should definitely make some more recipes in your Crock Pot this winter, especially since your new HB is such a great size. I love using a crockpot in the winter for making soup I put it on and love being able to not have to keep checking it, saving you time with your new baby.
Here is a recipe for a chocolate cake in the crock pot, just remember to spray your pot, and run a knife around the edges when finished.

My favorite trick is to find recipes that don’t need browning and you can throw in a ziplock and freeze until it’s time to put it all in the slow cooker for dinner. I find that most recipes it only ads an extra hour.

You could always buy a timer that plugs into the wall and that would get around the having to buy a new slow cooker.

I have an amazing chili recipe I found at allrecipes.com. I’ve also made a good lasagna shredded pork for sandwiches or burritos. Options are endless. I need to get back to using mine again too! I like to use it in the warmer months especially, because here in Tucson, cooking in the oven in the summer just creates too much heat in the kitchen.

We love crock pot italian chicken. It’s simple with just a few ingredients – chicken, packet of italian dressing mix, water, cream cheese, mushrooms, and cream of chicken soup. It’s so good over rice or pasta. In fact, we had it tonight. Can’t wait for your recipe to come! Thanks 🙂

My fav crockpot recipe is from “Fix it and Forget It” it is for corned beef and cabbage, but the key is that it uses applejuice and brown sugar to cook in. Of course the standard mustard is in there as well. Potatoes, carrots and onions on the bottom, oh yum!!!
I never liked corned beef before this recipe. Now we stock up when they are on sale around St. Paddy’s day. I buy 6 and freeze them so we can have it every other month.
