I never serve meat as a whole item. For example, we used to each eat our own chicken breast with some sauce or topping, and a pack of breasts went extremely fast. Now I chop, dice or shred meat items into vegetable mixtures, or just pound breasts thin and serve half.
No one has noticed a difference.

I never learned how to cook meat. And my husband’s a vegetarian. AND we almost always eat at home. So no meat till we go out to eat, anyway! 🙂
We buy a tonne of veggies and fruit, so there’s always pressure to finish them before they go bad. We make sure we put them in EVERYTHING we possibly can. I can’t even imagine an omelette without some veg anymore. Every meal of ours has at least 2 vegetables… somewhere… the curry or the lentils or the casserole or even the bread and rice!
And the best part is, I don’t crave meat anymore. It’s just a nice bonus, now. 🙂

I like to plan one meatless meal per week using eggs or beans in place of meat. It is a great budget stretcher and tasty too. Vegetarian chili, lasagna, black bean tacos, omelets, pizza. There are a lot of delicious options if you decide to go completely meatless.
