It’s THAT time of year again — the time when zucchinis are over-producing in your garden and mere pennies at the grocery store. If you’re like most people I know, you’re scrambling for more recipes to use up all the zucchini!
This is actually the first year we’ve had any type of vegetable garden at this house. We always had a big garden at our first house, but I think we’ve just been too busy with babies and house projects to feel up to planting and maintaining a vegetable garden on top of everything else.
In the past, we’ve always received zucchini from friends or family who had too much — but this year, we finally planted our own garden (about a month late… oh well) and Nora could not be more excited.
We visit our garden every day to see what veggies are ready to pick, and the first time we were able to pick the zucchinis, she shouted, “Look mom! Kah-zee-nees!”
She’s now a pro at correctly pronouncing and identifying ripe zucchinis — although not as thrilled with eating them 🙂
Thankfully, we only planted one plant — however, if you have multiple plants and are looking for a way to use up some of your bounty, I have a super fast and easy grilled zucchini recipe for you today!
Recipe for Easy Grilled Zucchini:
INGREDIENTS:
- zucchini; sliced lengthwise into 1/4″ slices (figure about 3 slices per person)
- oil (whatever kind you have in the house)
- salt, pepper, and garlic powder; to taste
DIRECTIONS:
- Wash zucchini and slice lengthwise into 1/4″ thick slices
- Brush both sides of zucchini with oil
- Sprinkle both sides with salt, pepper, and garlic powder (or any flavors you enjoy with zucchini)
- Place slices on a hot grill for about 3 minutes per side
- Serve immediately
This is such a simple way to cook and serve zucchini when you already have the grill out — just make sure you don’t over-cook it as some grills might cook faster than ours.
We’re big fans of grilled vegetables (like this grilled corn on the cob) as I feel like the grilling process really brings out the flavor of the veggies!

One of my absolute all-time favorite vegetables. Zucchini is so easy to grow it’s ridiculous, so we always have it in high supply during the summer months. Like you, we cut it lengthwise, add a little lemon juice and pepper and are always satisfied with the results. It’s the quintessential summer side dish!

I have been making zucchini lasagna. I slice larger zucchini into slices and replace lasagna noodles with the zucchini slices. I still use all of the meat, cheese, sauce, etc. that I use with my regular lasagna; the only change is replacing the noodles with similarly shaped zucchini slices. It’s nice to serve with bread because you end up with a little bit of liquid that you can dip the bread into. It’s become one of my teen’s favorite summer dinners.

Another use for zucchini is sliced into small julienne strips and added to a green salad. It adds a lovely extra crunch. I also like fresh dill with this.

I just cut the zucchini on half lengthwise. It takes a little longer to cook of course as it is thicker but I think it is easier to have less on the grill. One of my favorite things about zucchini is the fact that it is around most of the year. We love to make zucchini fries year around. Of course going to the garden is best but this year has not been a good zucchini year for us.

Grilled zucchini is a staple for us every summer. We cut the zucchini in quarters length ways, let them sit in olive oil, balsamic vinegar and kosher salt for 5 minutes to 30 minutes depending. Then we grill until they starting to cook but still have a little crunch. If we’re feeling extra fancy we’ll put Parmesan cheese on them as they’re grilling. Yum! This works good in the oven under the broiler too.

Grilled zucchini is a hit here. Was wondering if you have ever tried to marinate your zucchini slices in Zesty Italian salad dressing for several hours before grilling? It as well as zucchini bread is one of our favorites.
