Moving during the holidays is tough — especially for someone who loves to cook and bake as much as I do.
Usually, during the holiday season, I stuff my pantry with baking essentials and pack my fridge and freezer full of delicious holiday treats!
This year, however; I’ve been doing the opposite. I’m on a mission to empty our freezer and eliminate the bulk of our pantry in time for our big move NEXT WEEK!!
Things are going pretty well and I’ve been saving a TON on my grocery bill each week! I’ve also gotten pretty creative with some of the “concoctions” and recipes I’ve come up with — using ONLY the ingredients we have in the house.
And I must say, these Monster Brownies are my best concoction to date! Not only do they start with a boxed brownie mix, but you can mix and match whatever extra toppings you have in the house!!
I used Heath, marshmallows, caramel, and Hershey’s dark chocolate chunks {all from the back of my freezer!}
INGREDIENTS:
- Boxed brownie mix for a 9 x 13″ pan
- 1 – 2 c. chopped Heath Bar
- 2 Dark Chocolate Hershey’s candy bars — chopped
- 2 c. mini marshmallows
- 15- 20 caramels
- 2 T. milk or cream
- OR — any extra baking ingredients you’re trying to get rid of!
DIRECTIONS:
- Make the brownie mix as called for on the box {in a 9 x 13″ pan}
- Bake the brownies as directed but pull them out of the oven 3-5 minutes early
- Top with all toppings EXCEPT caramel
- Put back into the oven for about 5 minutes or until marshmallows are “puffy”
Now, you could just eat them “as is” — I garuntee they will be delicious!
But for an extra bit of ooey-gooey-goodness, I’d recommend drizzling them with caramel 🙂
For the caramel:
- Unwrap about 15-20 caramels and place in a small microwavable bowl
- Pour 2 T. milk over the caramel
- Microwave on high for several 30-second intervals — stirring between each interval {see pictures below}
- Drizzle caramel over brownies and let sit until firm
Oh, and if you’re wondering why I call them “Monster Brownies”, it’s because they are similar to my Monster Cookie recipe where I just dump a bunch of delicious candies and other baking ingredients into the dough.
Hmmm…these sure don’t look like a boxed brownie mix to me!

And since you’ll probably have a bit of caramel left over, treat yourself to a delicious apple dipped in caramel…
…with a piece of Monster Brownie for “dessert”!!
