I don’t know about you, but during the hot summer months, I’m all about making simple dinners that don’t require much cooking — at least not in the oven. I like using simple ingredients, a crock pot, a frying pan, the grill, and the microwave. And on really hot days, we make sandwiches or salads!

It’s been so hot here in New Jersey … I could use some no bake recipes. Thanks for the roundup. My current favorite is quesadillas. They need just a bit of time on the stove, so they don’t really heat up the house, and you can eat them once they’ve cooled down a bit if you prefer.
