It’s the middle of July which means my vegetable garden is finally starting to look good — it always seems to take too long!
My garden is very small this year but I’ve already picked herbs, rhubarb, beans, zucchini, summer squash…and the tomatoes starting.
I don’t know about you, but I never get tired of cooking with produce I picked earlier in the day — it’s amazing to eat food that’s only a few hours old.
However, this time of year I’m always searching for recipes to use up all my extra tomatoes.
I use Roma tomatoes to make salsa and spaghetti sauce and we eat the Cherry and Grape tomatoes whole or on salads.
I can whole tomatoes to use in soups, stews and casseroles…but I still need more recipes!

I love coming across old posts like this. It is motivating to see that you once didn’t get tons of comments on every post like you do now. This has to be one of your first? Gives hope to those wanting to start a blog. You’ve come a long way, and have an amazing blog!
