Although my childhood self was not keen on tomatoes, I do always remember liking tomato soup…. and to this day, it’s still one of my favorite soups.

Nowadays though, I make tomato soup from scratch, and it’s not nearly as difficult or time-consuming as you might think — especially if you used canned tomatoes!

Even though the weather is warming up and we’re verging on summer vacation (only TWO more weeks of school for Dave!!!) I still keep soup on regular rotation in our weekly meal plans.

A couple weeks ago, I was in the mood for my favorite chicken and rice soup. The only problem was, I had about 2 Tablespoons of rice left with no back-up bag… and I realized this around 4:30pm.

So after quickly scrambling to come up with a new recipe, I decided on chicken noodle soup — and within 30 minutes, we had homemade, from scratch, chicken noodle soup on our table!

After 3+ weeks of frigid temperatures and lots of snow, soup has been in regular rotation on our weekly menu plan — and a couple weeks ago, the ONLY soup I really wanted to make was Vegetable Beef.

Thankfully, I had a bunch of veggies to use up… and 20 minutes later, my soup was simmering! Yes, in less than 20 minutes, you can have this simple, from-scratch soup simmering on your stove too!

Our New Favorite Cheese Broccoli Soup

With all the frigid temperatures here in West Michigan lately, I found that we were craving warm comfort foods like soup and homemade bread — so since I hadn’t made Cheese Broccoli Soup all winter yet, I decided to give it a go with a new recipe for us.

I made a few tweaks and can personally say that I think they made a big difference — and this is now our “go-to” Cheese Broccoli Soup recipe!

Cheesy Mashed Potato Soup

We love eating just about any variety of soup or stew — especially on cold winter evenings. And I love making soup because we always end up with lots of leftovers for later in the week or for the freezer… so yeah, we eat a lot of soup!

I “discovered” this recipe two years ago when I was making soup to take to school for Dave’s birthday lunch. I wanted something that was a little different than all the “traditional” soups, but still really hearty and delicious. Thankfully, this recipe was a huge hit and my pot was practically licked clean!

Spicy Refried Bean Soup

Dave and I {and our two international students} all love soup and we all love anything Mexican. So the other night, when I made this Spicy Refried Bean Soup — you can probably imagine it was a big hit.
Everyone had seconds and there was still plenty left over for lunches — and I even put a large container in the freezer!

Oh, and did I mention it only took about 30 minutes to make!

Sweet Potato Chili

Dave and I love almost any type of chili — and I love how quick and easy it is to make {and freeze for later}. So I’m always on the look-out for new and different chili recipes to try.

This sweet potato chili is one of our all-time favorites and I actually stumbled upon it by accident a few years ago… and now I’m hooked!
