Easy Cookie Bars (With Any Cookie Dough)

Our family loves cookies so I bake very regularly. Whenever I’m short on time, or when we’re feeding a crowd, I almost always make “cookie bars” instead of traditional cookies. They are SO yummy!

Run to the kitchen, make or buy your favorite cookie dough, grab whatever baking pans you have in the house, and I’ll show you how to whip up a batch of these super simple Cookie Bars!

Monster Cookies

Our family loves almost any type of cookie, but Monster Cookies are our all-time favorites — probably because they combine all our favorite things into one cookie (chocolate chips, M&M’s, peanut butter, and oatmeal!)

This recipe makes 12 dozen LARGE cookies — it’s a biggie, one might even say it’s a “monstrous batch” of cookies! 🙂

Cookie Crumb Truffles (my favorite way to use up stale baked goods)

During my eat-from-the-pantry challenge last year, I used up various qualities of stale cookies, crackers, pretzels, cereals, bars, and brownies no one apparently wanted to eat anymore.

Miraculously, after mixing these stale crumbs with cream cheese and dipping them in chocolate, they were everyone’s new favorite treat! I’m sharing the simple “recipe” in today’s post!

My Great Aunt’s Spiced Molasses Cookies!

Growing up, one birthday tradition I loved more than most was when my great aunt Hilda (my mom’s aunt) brought us a huge platter of her delicious homemade spiced molasses cookies. 

I never got her recipe before she passed away… but then, 2 weeks ago, after a conversation with a distant relative, I stumbled across the recipe and have been enjoying these delicious cookies once again!

My kids love any type of frozen treat (especially during hot summer months). And while we do have some popsicles, ice cream sandwiches, and freeze pops, I also freeze gogurts, we make our own juice and pudding pops, AND I’ve started making chocolate covered banana pops (and bites) — which the kids think are so fantastic.
