Tater Tot Casserole From Scratch (with Homemade Cream of Mushroom Soup)

posted by Andrea | 09/4/2019 | 11 comments

Tater Tot Casserole is one meal Dave and I both grew up enjoying… and it’s definitely one of our kids’ most favorite meals ever! I make it roughly once a month, all year round — but my recipe looks a little different than it did when I originally shared it back in 2014.

I have added more veggies and fiber, reduced the fat, calories, and sodium, and used a REALLY simple recipe for homemade Cream of Mushroom Soup. The prep time is still quite minimal, and my kids still LOVE this meal!

Southwest Spaghetti Squash Casserole

Today’s recipe for Southwest Spaghetti Squash Casserole is one of our favorites. Since I almost always have a container of roasted, shredded spaghetti squash in the fridge, and several containers of cooked black beans and meats in the freezer, it only takes me a few minutes to have this casserole ready for the oven.

It’s perfect for busy afternoons and evenings because it doesn’t require any side dishes — just some chips, salsa, and guacamole!

Sweet Potato Black Bean Tacos

Today’s recipe for Sweet Potato Black Bean Tacos is one of those yummy meals that tastes just as good for leftovers as it does fresh-from-the-oven, which is probably why I make it at least once or twice a month!

It is a vegetarian dish — but you could easily add cooked ground beef or cooked shredded chicken if you want some meat. However, with the black beans and mushrooms (and cheese), our family doesn’t even miss the meat.

Super Easy Fried Rice

One of my favorite ways to use leftover rice is to make this super easy homemade fried rice. Of course, if you don’t have leftover rice, you can easily just make your own rice and turn it into fried rice. Either way, the results should be quite tasty!

If you’ve ever been intimidated by making your own fried rice, I hope today’s recipe will give you the guts to give it a try!
