Over the years, I’ve written countless posts about meal planning. These posts DO mention the various side dishes we eat with our meals, but I’ve never really gone into much detail about how I plan, prep, and prepare our side dishes

I’ve gotten a huge number of questions about side dishes, so I felt it was finally time to devote one full post to the topic… that’s what we’re focusing on today!

Impossibly Simple Slow Cooker Squash

If you’ve never tried squash before, NOW IS THE TIME! They are fresh, in-season, and most likely selling at rock-bottom prices at your local grocery store or farmer’s market.

Cheesy Zucchini “Rice” Casserole

I’m frequently asked for more “side dish” recipes — and today’s recipe has been a favorite side dish of ours all summer long. The kids eat it really well, which is impressive considering it’s basically all vegetables as I swap out the rice for cauliflower rice.

I guess if there’s enough cheese, kids will eat anything!

Grilled Corn, Tomato, Avocado Salad

This recipe for grilled corn, tomato, avocado salad is SO versatile — you can serve it as a condiment for tacos, as a dip for chips, as a side dish for almost any type of Mexican meal, as a salad topping, or even as a stand-alone main-dish (yes, I have eaten a big bowl of this for lunch many times!)

Oh, and it’s extremely simple to make, uses fairly basic ingredients, includes TONS of seasonal veggies, and can easily be made well in advance — win, win, win, win!

Easy Italian Chopped Salad

Dave is not a picky eater, but when it comes to salads, he definitely prefers one with a fair amount of meat and cheese to go along with the vegetables… so this hearty Italian Chopped Salad is a win-win for both of us.

It’s also extremely quick and easy to put together, and can be assembled several hours (or even a day) in advance without sacrificing freshness!

Easy Homemade Guacamole

A couple months ago, I mentioned that we love the single-serving guacamole packs from Costco. However, whenever I’m making food for a crowed (or even just a few guests) I always opt for a big bowl of homemade guacamole… and THIS is always the recipe I use!

It’s so fast and easy, and if you use the simple tips I share, your guacamole SHOULD stay looking fresh for several days!

Super Easy Fried Rice

One of my favorite ways to use leftover rice is to make this super easy homemade fried rice. Of course, if you don’t have leftover rice, you can easily just make your own rice and turn it into fried rice. Either way, the results should be quite tasty!

If you’ve ever read the Weekly Menu section of my Peek Into Our Week posts, you’ll notice that we eat A LOT of applesauce! Every year, I can roughly 50 quarts of delicious homemade applesauce and we enjoy it as a simple side dish with most of our meals.

However, on special occasions, I often whip up a fresh batch of chunky cinnamon applesauce — with the delicious addition of Red Hot candies! I’m sharing that recipe today!

Loaded Baked Potato Casserole
